Toss pasta with 1 tablespoon of olive oil until well coated.
Working in batches, spread a single layer of pasta in the basket of your air fryer. Be sure there is space between each noodle and avoid overcrowding.
Cook at 400° for about 8 minutes until noodles are beginning to blister and just lightly golden brown.
While the pasta is cooking, mix together the remaining olive oil, Italian seasoning, garlic, salt, and pepper.
Drizzle the olive oil mixture over the blistered pasta and toss (in the air fryer basket). Cook for 2-3 minutes longer until the pasta is golden brown.
Toss cooked pasta chips with the parmesan cheese and serve immediately.
