Prevent your screen from going dark
In a small bowl, beat egg.
In another small bowl, combine panko, flour, parmesan, Italian seasoning, garlic powder, salt and pepper.
Spray air fryer basket with cooking spray.
Dredge the zucchini in the egg then roll in the breading mix.
Place zucchini wedges into the air fryer basket. Spray tops and sides of zucchini wedges with olive oil.
Cook at 400°F for 10 minutes. Do not overcrowd the basket.
When the breading is browned, remove from the air fryer. Serve.
- If you’re using more than one zucchini you may need to cook in batches, depending on the size of your air fryer.
- The breading will be dry if you don’t brush or spray with oil before or during cooking.
