Equipment
1c crock pot
Ingredients
4potatoes, large
1tablespoonolive oil
1tablespooncoarse salt
Instructions
Scrub potatoes to get all dirt off the skin of the potato. Pat dry.
Poke potatoes 6-8 times with a fork to vent the potato.
Wrap potato in aluminum foil.
Place potatoes into the Crock Pot and cover with a lid.
Cook on low for 8 hours.
Check to see if the potatoes are cooked through by opening the foil of one potato and poking with a fork. If the fork inserts into the potato easily the potatoes are cooked. If there is resistance and they are still a bit hard, cover again and cook for an additional 1-2 hours.
Notes
You do not have to cover the potatoes in foil. They will still cook but will take a little longer. We tested unwrapped and wrapped in the same Crock Pot and the wrapped were fully cooked in 8 hours but the unwrapped required another hour of cooking.
Unwrap the baked potatoes and cut a slit down the center. Use a fork or knife to fluff up the potato in the center. Top with your favorite baked potato toppings, including butter, shredded cheese, sour cream, bacon, chives or chili.
