Wash, peel and cut carrots into ½” thick pieces. Cut diagonally or cut into sticks or rounds, if you prefer.
In a bowl, toss the carrots with olive oil, honey, salt, pepper and garlic to coat.
Spray air fryer basket with non-stick cooking spray to prevent the carrots from sticking.
Place the carrots into the air fryer basket. Cook at 400°F for about 20 minutes. Stir or toss the carrots once or twice while cooking. Remove from the air fryer when they’re tender crisp or the consistency you prefer.
Mix carrots with 1 tablespoon of balsamic glaze and melted butter.
Garnish with 1 tablespoon of balsamic glaze drizzled over top. Sprinkle with fresh parsley.

Air Fryer Notes:
Some air fryers have a pre-heat option. Preheating may reduce the cooking time a little bit.
Recipe Notes:
Do not overcook carrots. They will become mushy. A fork should be able to poke into the cooked carrot with a little resistance.
To double the recipe, cook carrots in shifts in the air fryer. You do not want to overcrowd the air fryer.
