Crispy, buttery and flaky puff pastry topped with succulent apple pie filling and sweet streusel topping. This apple pie bars recipe is meant to be an easy recipe anyone can make!
Preheat oven to 400°F. Line baking sheet with parchment paper.
Roll out pastry dough. Place on parchment paper on baking sheet.
Fold edge over ¼” around the outside of the puff pastry.
Poke the pastry (except the edges) with a fork 10-15 times.
Spread 1 can of pie filling on the puff pastry, inside the edges.
Mix topping ingredients together with 2 forks or a pastry blender.
Spread ½ the topping over apple pie filling.
Brush edges with egg wash.
Bake for 20 minutes or until puff pastry is puffed up and topping is golden.
Repeat with other pastry sheet and pie filling. Let cool, then cut into squares and serve.
Notes
Instead of folding over edges, you can also use a knife to lightly cut (score) around the edges. This will help the outside edge puff up more than the inside the pie filling is on.
