Easy Creamy Chicken Bake Recipe With Cream Of Chicken

Delicious easy creamy chicken bake recipe with condensed cream of chicken soup is simple and tasty.

Equipment

  • 9x13inch baking dish
  • meat tenderizer or rolling pin
  • small mixing bowl
  • whisk

Ingredients
  

  • 3 boneless skinless chicken breasts (about 6-8 oz each)
  • 1 tablespoon olive oil
  • ¼ teaspoon salt
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ½ teaspoon black pepper
  • cups condensed cream of chicken soup
  • cup sun-dried tomatoes drained and chopped
  • 2 teaspoon garlic minced
  • ¼ cup shredded parmesan cheese + 2 tablespoons for topping

Garnish:

  • ½ cup fresh spinach chopped
  • ¼ teaspoon red pepper flakes
  • 2 tablespoon fresh parsley chopped

Instructions

  • Preheat oven to 425°F.
  • Flatten chicken breasts if they’re more than ¾” thick by pounding with a meat tenderizer or rolling pin.
  • Place chicken in a 9x13” baking dish, leaving a little room between each breast and rub with olive oil.

  • Combine salt, Italian seasoning, paprika, and pepper. Then rub chicken with the seasoning mixture.

  • Add sun-dried tomatoes and garlic to the baking dish around the chicken.

  • Stir ¼ cup of parmesan cheese together with the cream of chicken soup. Whisk until well combined.

  • Pour cream of chicken mixture around chicken in the baking dish.

  • Sprinkle 2 tablespoons of cheese over the whole dish.
  • Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F.

  • Remove from the oven. Add chopped spinach to the cream sauce. It will wilt as it sits.

  • Garnish with fresh parsley and (optional) red pepper flakes. Serve
    parsley sprinkled over baked chicken

Notes

  • If you prefer, whisk together  ½ cup of condensed cream of chicken soup and a ½ cup of water or milk to make the soup thinner.
  • If your chicken breasts are especially large, you can cut them in half so you have 2 thin chicken breasts.
