Ingredients
Vinaigrette Ingredients:
1tablespoonred onionfinely minced
1clovegarlicfinely minced
½teaspoonItalian seasoning
1teaspoongranulated sugar
½teaspoonblack peppercoarse
sea saltto taste
1tablespoonred wine vinegar balsamic or white wine vinegar also work
3-4tablespoonsolive oil
Salad Ingredients
½red onionthinly sliced
1cupcherry tomatoeshalved
½cuppepperoncinissliced
1cupblack olives
½cupgrated parmesan cheese
1headgreen or red leaf lettuce
croutonsas needed
fresh parsley for garnish
Instructions
Place finely minced onion and garlic, Italian seasoning, sugar, pepper, and salt in a large mixing/salad bowl. Whisk together.
Add vinegar and whisk to combine.
While continuously whisking, drizzle olive oil into the mixture until all of the ingredients emulsify.
Add lettuce.
Top with remaining salad ingredients and toss to coat everything with the salad dressing from the bottom of the bowl.
Add croutons and parsley if desired immediately before serving.
