Ground Beef Vegetable Soup Recipe

Comforting soup loaded with veggies and tender beef that is quick and easy to make and full of flavor. With only 10 minutes of hands-on prep time, this vegetable beef soup is an excellent weeknight meal.

Equipment

  • large pot or dutch oven

Ingredients
  

  • 1 lb ground beef
  • ½ yellow onion chopped
  • 2 celery stalks chopped
  • 3 cloves of garlic pressed
  • 14.5 oz canned diced tomatoes
  • 3 carrots diced
  • 2 Russet potatoes peeled and diced
  • 16 oz frozen vegetables
  • 4 cups beef broth
  • 1 teaspoon salt
  • ¼ teaspoon fresh ground black pepper
  • ½ tsp dried oregano

Instructions

  • In a large pot or saucepan over medium heat, brown ground beef.

  • When beef is halfway cooked, add onion and celery to the pan.

  • Once the beef is cooked, drain the excess fat.
  • Add garlic, saute for 1 minute until fragrant.
  • Add canned tomatoes and the juices, carrots, potatoes, frozen vegetables, beef broth, salt, pepper, and oregano. Turn heat up to high to bring to a boil.

  • Reduce heat to simmer for 20 minutes or until the potatoes and carrots are tender.

  • Remove from heat. Season with salt and pepper to taste.

  • Serve.

Notes

  • Serve with crusty bread, cheesy bread or noodles.
  • Sprinkle with grated parmesan cheese, chopped fresh parsley or red pepper flakes, if desired.
