Comforting soup loaded with veggies and tender beef that is quick and easy to make and full of flavor. With only 10 minutes of hands-on prep time, this vegetable beef soup is an excellent weeknight meal.

Ingredients
1lbground beef
½yellow onionchopped
2celery stalkschopped
3cloves of garlicpressed
14.5ozcanned diced tomatoes
3carrotsdiced
2Russet potatoespeeled and diced
16 ozfrozen vegetables
4cupsbeef broth
1teaspoonsalt
¼teaspoonfresh ground black pepper
½tsp dried oregano
Instructions
In a large pot or saucepan over medium heat, brown ground beef.
When beef is halfway cooked, add onion and celery to the pan.
Once the beef is cooked, drain the excess fat.
Add garlic, saute for 1 minute until fragrant.
Add canned tomatoes and the juices, carrots, potatoes, frozen vegetables, beef broth, salt, pepper, and oregano. Turn heat up to high to bring to a boil.
Reduce heat to simmer for 20 minutes or until the potatoes and carrots are tender.
Remove from heat. Season with salt and pepper to taste.
Serve.
Notes
Serve with crusty bread, cheesy bread or noodles.
Sprinkle with grated parmesan cheese, chopped fresh parsley or red pepper flakes, if desired.
