  • ½ yellow onion, diced
  • 2 celery stalks, chopped
  • 3 cloves garlic, pressed
  • 14.5 oz canned diced tomatoes
  • 3 large carrots, diced
  • 2 Russet potatoes, peeled and diced
  • 16 oz bag frozen vegetables
  • 4 cups beef broth
  • 1 tsp salt
  • ¼ tsp fresh ground black pepper
  • ½ tsp dried oregano

BROWN BEEF AND VEGGIES: Firstly, in a large dutch oven over medium heat, brown the ground beef in some olive oil. When the hamburger meat is halfway cooked, add onion and celery to the pan. As soon as the beef is fully cooked, drain the excess fat. Afterwards add the garlic and sauté for 1 minute until fragrant.

COMBINE AND COOK: Next, add the rest of the ingredients. Then turn the heat up to medium-high heat and bring to a boil. Afterward, simmer on low heat for 20 minutes or until the potatoes and carrots are tender.

  • 1 lb ground beef
  • ½ yellow onion chopped
  • 2 celery stalks chopped
  • 3 cloves of garlic pressed
  • 14.5 oz canned diced tomatoes
  • 3 carrots diced
  • 2 Russet potatoes peeled and diced
  • 16 oz frozen vegetables
  • 4 cups beef broth
  • 1 tsp salt
