    Air Fryer Breakfast Biscuit Bites

    These easy to make breakfast sandwiches are perfect for busy families, but also a great addition to a brunch with friends. They are quick and easy to make and offer endless possibilities for flavor combinations.

    Were you looking for an opportunity to use up some precooked bacon or leftover breakfast sausage? Then this is the perfect recipe for you. Just scramble some eggs, add your favorite breakfast meat and some cheese, wrap it all in pieces of biscuit dough and cook them in the air fryer.

    POSSIBLE VARIATIONS

    • 3 CHEESE BOMBS – Soft and flaky biscuit dough wrapped around melty cheese makes one of the world's best appetizers.
    • HAM AND CHEESE SANDWICH BITES – Ham and cheese wrapped in a soft biscuit crust and baked in the air fryer.
    • PIZZA BOMBS – Simply add some chopped pepperoni to your cheese center and prepare as described.
    • BREAKFAST SAUSAGE - Cook your favorite breakfast sausage and use instead of bacon.

    BREAKFAST BISCUIT BITES INGREDIENTS

    You may have all of these bacon and egg bites ingredients in your refrigerator or pantry and not need to make a trip to the grocery store. See recipe card below for ingredient amounts.

    • Refrigerated biscuits: We used large canned Grands biscuits, but canned crescent dough or pizza dough can be substituted.
    • Cheddar Cheese: You can substitute your favorite cheese.
    • Eggs: Cook your scrambled eggs before starting the recipe.
    • Bacon: You can use pan cooked or air fryer bacon.
    • Butter: Use unsalted or salted, whichever you prefer.

    SERVING SUGGESTIONS

    Enjoy this great recipe as a great addition to a brunch with these other recipes:

    SUBSTITUTIONS

    • Canned dough – In case you ran out of canned biscuits, you can also use refrigerated canned crescent dough or pizza dough.
    • Favorite fillings – You can try Swiss cheese, Gruyere, pepper jack, brie or any type of cheese instead of cheddar cheese. You can also substitute cooked breakfast sausage or ham for the bacon.
    • Toppings – Freshly grated parmesan cheese would also be a great topping choice for these breakfast bites.

    TOOLS AND SUPPLIES NEEDED:

    • knife and cutting board

    • air fryer

    CUT CHEESE: Cut cheddar cheese into 16 cubes. Set aside.

    KITCHEN TIP

    Try making these breakfast biscuit bites with Swiss cheese, Gruyere, pepper jack, brie or any type of cheese you prefer.

    PREPARE DOUGH: Open the can of biscuits. Split each biscuit in half, so you end up with 16 thinner biscuits. Slightly flatten them out.

    KITCHEN TIP

    In case you don't have any canned biscuits at hand, you can also use refrigerated canned crescent dough or pizza dough.

    FILL BISCUIT BITES: Scoop ¼ of a piece of bacon, 1 spoonful of scrambled eggs and 1 cheese cube into the center of each biscuit circle.

    KITCHEN TIP

    Optional: Use cooked breakfast sausage instead of bacon.

    SHAPE BISCUIT BOMBS: Wrap the biscuit dough around the filling and seal closed with your fingers.

    PLACE IN AIR FRYER: Place breakfast bites into the air fryer basket so they are not touching. You might have to do two batches, depending on the size of your air fryer.

    KITCHEN TIP

    If biscuit bites are too close together in the air fryer they might cook together and therefore may not cook completely within 6 minutes. If this occurs, increase cooking time.

    BASTE WITH BUTTER: Baste the tops of the breakfast bombs with the melted butter using a pastry brush.

    KITCHEN TIP

    If you like your breakfast biscuit bites extra buttery, baste the tops with butter again after they are done baking.

    SPRINKLE WITH TOPPING: Sprinkle breakfast bites with salt.

    KITCHEN TIP

    Optional: Sprinkle some fresh grated parmesan cheese on top of the breakfast biscuit bites before cooking. 

    AIR FRY BREAKFAST BOMBS: Cook in the air fryer at 350ºF for 6 minutes. Time may vary depending on your machine so check them at 5 minutes.

    COOL: Let them cool for a few minutes before eating. Serve with fresh fruit.

    STORAGE TIPS

    Refrigerate: Due to their cheese and egg filling, these air fryer breakfast sandwiches are best eaten fresh. If you have leftovers, store them in an airtight container or ziplock bag in the fridge for up to 3 days. To reheat, pop them in the microwave for about 10-15 seconds.

    Freeze: If you would like to freeze your leftovers, individually wrap each biscuit bite with plastic wrap and put them into a ziptop freezer bag or an airtight container. Biscuit bombs can be frozen for up to a month.

    Defrost: To defrost, unwrap desired number of biscuit bites completely and put them on a microwave safe plate. Cover them with a paper towel. Reheat in the microwave for 1 - 1 ½ minutes, depending on your machine.

    Does it matter what kind of refrigerated dough I use?

    You can use refrigerated canned biscuits, crescent or pizza dough for similar results.

    I don't have an air fryer. Can these breakfast bites also be baked in the oven?

    Yes, you can also place the bacon and egg bites on a baking sheet lined with parchment paper and bake them at 375ºF for about 10 minutes until golden brown and baked through. Brush biscuits again with melted butter.

    Can I add other breakfast meats to the filling?

    Yes, you can add cooked breakfast sausage or ham instead of or in addition to the bacon.
