Open the can of biscuits. Split each biscuit in half, so you end up with 16 thinner biscuits. Slightly flatten them out.
Scoop ¼ of a piece of bacon, 1 spoonful of scrambled eggs and 1 cheese cube into the center of each biscuit circle.
Wrap the biscuit dough around the filling and pinch the seams together with your fingers to seal closed.
Place breakfst bites into the air fryer basket so they are not touching. You might have to do two sets, depending on the size of your air fryer.
Baste the tops of the breakfast biscuit bites with the melted butter using a pastry brush.
Sprinkle them with salt.
Cook in the air fryer at 350ºF for 6 minutes. Time may vary depending on your machine so check them at 5 minutes.
Remove breakfast bites from air fryer when the tops are a deep golden brown and they are baked through.
Let them cool for a few minutes before eating.
Notes
Optional: Use cooked breakfast sausage instead of bacon. Optional: Sprinkle some fresh grated parmesan cheese on top of the breakfast biscuit bites before cooking. If biscuit bites are too close together in the air fryer they might cook together and therefore may not cook completely within 6 minutes. If this occurs, increase cooking time. Serve with fresh fruit.
