Lightly grease a silicone egg bite mold.
Crumble up the bacon and sprinkle half in the bottom of the egg molds.
In a blender, combine eggs, milk, salt, pepper, cheese and mustard.
Blend on high speed for 10-15 seconds until eggs, cheese and spices are well blended.
Pour into silicone mold. Leave a little space at the top of each mold so they don’t overflow when cooking.
Sprinkle remaining bacon on top.
Cover the mold with a silicone cover or use foil if you don't have a silicone lid.
Pour 1 cup of water into the Instant Pot.
Place a rack in the bottom of the Instant Pot. Place mold on top of rack so it’s not sitting in the water.
Close Instant Pot lid and set valve to closed.
Choose high pressure or manual and set for 8 minutes.
Allow a 5-10 minute natural release.
Vent valve to release any pressure then remove lid once all the pressure is released.
Remove silicone mold from the Instant Pot. Allow to cool for 1-2 minutes. Remove lid then invert mold onto a plate to remove egg bites.
Serve warm egg bites alongside toast and fresh fruit.
