  • Instant Pot Egg Bites

Perfectly seasoned eggs combined with cheddar cheese and bacon make a super yummy protein-rich, gluten free, low-calorie and low-carb breakfast treat or snack. You can easily customize egg bites by using different mix-ins, such as mushrooms, cooked sausage or smoked salmon.

WHAT IS AN EGG BITE?

Egg bites are whipped up eggs, flavored with spices and add-ins like cheese, spinach, bell pepper, mushrooms or bacon. They are crustless, cooked in bite sized molds in the air fryer or Instant Pot and come out incredibly light, flavorful and airy, much like a soufflé.

INGREDIENTS

You may have all of these Instant Pot egg bite ingredients in your refrigerator or pantry and not need to make a trip to the grocery store. See recipe card below for ingredient amounts.

  • Eggs
  • Milk: Whole milk works great in this recipe.
  • Bacon: You can use bacon cooked in a pan, air fryer or oven.
  • Salt
  • Pepper
  • Cheddar Cheese: We used sharp cheddar with this recipe, but Monterey Jack cheese or Gruyere cheese would also be great choices.
  • Ground Mustard

VARIATIONS: Try Different Add-ins!

Instead of bacon, you can add other mix-ins to your egg bites. We also love:

  • spinach and red bell pepper
  • kale and ham
  • cooked breakfast sausage
  • mushrooms and green onions
  • crumbled up feta cheese and olives
  • smoked salmon and chives.

It is important that you don’t add too many add-ins into your egg bites or they will not stay together well. Add-ins that increase moisture may need to be cooked slightly longer.

INSTRUCTIONS

PREPARE: Lightly grease a silicone egg bite mold with cooking spray. (link is an affiliate link)

🔴 TIP: We highly recommend using a silicone mold, as these cook up the eggs perfectly and make them easy to remove once cooked. You could also use silicone a muffin pan. Or we’d recommend placing a medium sized round cake pan (baking dish) and fill with individual silicone muffin cups. A muffin tin won’t work in this Instant Pot recipe.

BLEND EGGS: In a blender or food processor, blend eggs, milk, cheese, salt, pepper and ground mustard. Blend until smooth.

🔴 TIP: Don’t skip blending your egg mixture in a blender or food processor, whisking eggs and cheese by hand is tempting but blending creates a very fluffy egg bite that’s spongy and moist.

FILL CUPS: Put some bacon bits into the bottom of each egg cup. Pour eggs into egg cups. Leave a little space at the top of each cup.

🔴 TIP: Do not overstuff your egg bites, adding too many mix-ins will make the egg bites fall apart.

COVER: Cover silicone egg mold with a silicone lid or loosely tent with foil.

COOK: Lock and seal the Instant Pot. Cook for 8 minutes with a 5-10 minute natural release.

🔴 TIP: Be careful, changing the ratios of egg/milk/cheese/add-ins can change the consistency of the egg bites and change cooking time.

SERVE: Release the pressure and remove eggs from the Instant Pot. Remove egg bites from the silicone mold and serve.

🔴 TIP: Optional garnish: Sprinkle with fresh parsley or freshly grated cheese as soon as you remove the egg bites from the mold.

RECOMMENDED TOOLS

Instant Pot – With the Instant Pot, your bacon and egg muffins are going to be done in less than 20 minutes. If you don’t have an Instant Pot, check out our instructions on how to make this recipe in an air fryer.

HOW TO MAKE MINI EGG BITES IN AN AIR FRYER

⚠️ TIPS FOR THE STARBUCKS COPYCAT EGG BITES

Follow these tips to make the best bacon egg bites that taste like sous vide egg bites but are cooked in an Instant Pot.

✔️ Use a silicone mold for egg bites. These cook up the eggs perfectly and make them easy to remove once cooked.

✔️ Blend your egg mixture. Whisking eggs and cheese by hand is tempting but blending in a blender or food processor creates a very fluffy egg bite that’s spongy and moist.

✔️ Do not add too many fillings. Too many add-ins will make the egg bites fall apart.

✔️ Cover with a silicone lid or foil. Plastic lids will melt. Covering prevents the condensation drips from falling into the eggs.

✔️ Allow natural release time. 5-10 minutes of natural release time will help the eggs complete cooking.

STORAGE TIPS

Refrigerate: Let your Instant Pot egg bites cool completely. Store them in an airtight container or ziptop bag in the fridge for up to 5 days.

Freeze: Egg bites can also be frozen in an airtight, freezer safe container or freezer bag for up to 3 months.

Defrosting: Let your egg bites defrost in the refrigerator for a couple of hours or overnight. They can easily be reheated in the microwave or air fryer at 340ºF for 1-2 minutes.

FREQUENTLY ASKED QUESTIONS

For perfect results every time, here are answers to the most common questions about cooking bacon egg bites.

Can I cook my egg bites uncovered?

It is possible to cook your egg bites uncovered, but we do not recommend it for the Instant Pot method. A silicone lid or foil will protect your egg bites from condensation dripping down from the Instant Pot’s lid. Do not use a plastic cover for the egg cup mold, even if it came with the mold. It is only meant to be used for storage and will melt in the Instant Pot.

What can I do if my egg bites are runny?

Put your runny egg bites back into the Instant Pot and pressure cook them for an additional 2-3 minutes. If you add a lot of mix-ins, the egg bites will need longer to set. It is also very important to get most of the moisture out of your add-ins to make sure the egg bites will set properly.

Are egg bites healthy?

Egg bites are definitely a healthy snack or breakfast choice. They are low-carb, low-calorie and packed with nutritious veggies and protein.

Equipment

  • silicone egg bite mold
  • silicone mold cover or foil
  • food processor or blender
  • Instant Pot

Ingredients
  

  • 6 large eggs
  • ¼ cup whole milk
  • 2 slices of bacon cooked and crumbled
  • ⅛ teaspoon salt
  • ⅛ teaspoon pepper
  • ½ cup sharp cheddar cheese grated
  • ¼ tsp ground mustard

Instructions

  • Lightly grease a silicone egg bite mold.
  • Crumble up the bacon and sprinkle half in the bottom of the egg molds.

  • In a blender, combine eggs, milk, salt, pepper, cheese and mustard.

  • Blend on high speed for 10-15 seconds until eggs, cheese and spices are well blended.

  • Pour into silicone mold. Leave a little space at the top of each mold so they don’t overflow when cooking.

  • Sprinkle remaining bacon on top.

  • Cover the mold with a silicone cover or use foil if you don't have a silicone lid.

  • Pour 1 cup of water into the Instant Pot.
  • Place a rack in the bottom of the Instant Pot. Place mold on top of rack so it’s not sitting in the water.

  • Close Instant Pot lid and set valve to closed.
  • Choose high pressure or manual and set for 8 minutes.
  • Allow a 5-10 minute natural release.
  • Vent valve to release any pressure then remove lid once all the pressure is released.
  • Remove silicone mold from the Instant Pot. Allow to cool for 1-2 minutes. Remove lid then invert mold onto a plate to remove egg bites.

  • Serve warm egg bites alongside toast and fresh fruit.

Notes

  • Optional garnish: Sprinkle with fresh parsley or freshly grated cheese as soon as you remove the egg bites from the mold.
  • Changing the ratios of egg/milk/cheese/add-ins can change the consistency of the egg bites and change cooking time. 
  • You can add other ingredients, such as bell pepper, onion or spinach but we recommend sauteeing them before adding them to your egg bites. Add them to the bites after you’ve added the egg mixture to the mold. Do not add too many add-ins or the egg bites will not stay together as well and may not cook as well.
  • Do not use a plastic lid if your silicone egg bite mold has one. The plastic will melt in the Instant Pot.
  • Do not skip the natural release. This extra time gives the eggs time to finish cooking and set.
  • If your egg bites are not fully cooked, put them back into the instant pot, cover, reseal and set timer to 2 minutes.
