    Deep Fried S'mores

    For everyone who can't wait for next summer to make some delicious s'mores around a campfire, we have the perfect recipe for you. With just a few simple ingredients you can now make deep fried s'mores in your kitchen all year round.

    By using all the traditional components of this American classic: graham crackers, Hershey's chocolate bars and big, fluffy marshmallows, all the original flavor is still there, but the crispy batter on the outside is taking it to another level.

    DEEP FRIED S'MORES INGREDIENTS

    You may have all of these deep fried s'mores ingredients in your refrigerator or pantry and not need to make a trip to the grocery store. See recipe card below for ingredient amounts.

    • Bisquick pancake mix
    • Milk: Whole or skim milk work well in this recipe.
    • Vegetable oil: Canola oil can be substituted.
    • Egg
    • Graham crackers: Use rectangular sheets that can be broken into squares.
    • Marshmallows: Rectangular shaped s'more sized marshmallows work best for this recipe. We do not recommend using mini marshmallows because they would fall out during dipping and frying.
    • Hershey chocolate bars: Milk or dark chocolate can be used.

    INSTRUCTIONS

    TOOLS AND SUPPLIES NEEDED:

    • dutch oven or other heavy bottom pot
    • candy thermometer or oil thermometer
    • medium bowl
    • whisk or hand mixer
    • slotted spoon or slotted utensil
    • kitchen tongs

    PREHEAT THE OIL: Fill a heavy bottom pot 5-6 inches deep with vegetable oil. Use an oil or candy thermometer in the oil to monitor the temperature. Bring oil to 375°F.

    KITCHEN TIP

    Make sure you have the oil at the correct 375 ºF temperature before you start frying. If your oil is too cold the s'mores will absorb too much oil while cooking and become oily. If the oil is too hot the s'mores will burn.

    KITCHEN TIP

    When frying it is important to use an oil with a high smoke point like vegetable, canola, or peanut oil. Oils with a low smoke point may cause an odd taste in your food.

    COMBINE PANCAKE BATTER INGREDIENTS: Add pancake mix, milk, vegetable oil and egg to a mixing bowl.

    WHISK PANCAKE BATTER: Whisk until most of the lumps are gone. The mixture should be thick enough to coat your s'more without the batter running off. Add more mix if the batter is too thin or more milk if the mixture is too thick. Let batter sit for 5 minutes.

    STACK S'MORES: Stack a s'more by breaking your graham cracker sheets in half so you have 2 squares. Place one square down and put a marshmallow on top.

    ADD CHOCOLATE: Then add a square of chocolate (half a Hershey bar).

    FINISH S'MORES: Finish the stack by adding the top graham cracker. Make 8 of these.

    KITCHEN TIP

    Try making smaller s'mores if you are making them for little kids.

    DIP THE S'MORES: Coat s'more in batter, holding them together with you hands or tongs. Shake gently to remove excess batter.

    DEEP FRY: Gently place battered s'more into the hot oil. Hold the s'more in the hot oil with tongs for a couple seconds beore releasing the tongs. This will help the batter start to cook up and keep the s'more together. Alternatively, just hold half the s'more in the oil with your hands, being very careful to keep your fingers away from oil splatter.

    KITCHEN TIP

    If you have a deep fryer, you can also fry your s'mores in that.

    REMOVE FROM OIL: Remove from the oil when the whole s'more is a deep golden brown. Place on a wire rack covered in paper towel to absorb excess oil. Repeat with the rest of the s'mores.

    COOL: Allow to cool for 5-10 minutes then eat while warm.

    OPTIONAL: Dust your chocolate s'mores with powdered sugar.

    To be able to fully enjoy the gooey marshmallow and melty chocolate center of a battered and fried s'more, eat them while they are warm. Once they cool or are refrigerated the graham cracker becomes soggy.

    How long can you store deep fried s'mores?

    Deep fried s'mores are only good when eaten warm right after they are done. Once they cool or are stored in the refrigerator the graham cracker becomes soggy. They are therefore not suited to be stored.

    Can you reheat deep fried s'mores?

    Deep fried s'mores, like most fried foods, are best eaten fresh. We do not recommend reheating them as they would lose their crispiness and texture.

    What can you use instead of graham crackers for s'mores?

    Even though a delicious graham cracker is part of the original s'mores recipe, you can get creative and try out other options such as digestive biscuits, ginger snaps, Nilla wafers or even saltines.

      When Stef and I decided to make these I wasn't sure. Full disclosure, I'm not a huge s'mores fan. I know, I know, that's crazy. But I don't really love marshmallow. However, it turns out when you deep fry anything it makes it better. Definitely eat these while they're warm! It's a really fun alternative to traditional s'mores. - Andrea
