These light and crispy air fryer zucchini fries are easy to make, ready in only 20 minutes and taste absolutely delicious. Breaded with a mix of breadcrumbs, parmesan cheese and spices, zucchini fries taste great as a side dish with grilled or air fried meat, fish or seafood. You can also serve these guilt-free fries as an appetizer by themselves or with a dipping sauce.

WHAT ARE ZUCCHINI FRIES?

Zucchinis are cut into wedges, dredged in egg, then breaded in a blend of bread crumbs, parmesan cheese and spices. They are can be cooked to crispy perfection in the air fryer or oven. To make this dish low-carb and keto friendly almond flour can be substituted for the bread crumbs and flour.

  • Refrigerated/Frozen Ingredients: Parmesan cheese, egg. We prefer to freshly grate our parmesan but you can buy pre-grated if you want to save time.
  • Produce Ingredients: Zucchini. Fresh, never frozen.
  • Spices: Garlic powder, Italian seasoning, salt and black pepper.

FRIED ZUCCHINI AIR FRYER INSTRUCTIONS

PREPARE: Cut the zucchini in wedges, beat the egg in a bowl, and combine bread crumbs, parmesan cheese, flour and seasoning in a second shallow bowl.

BREADING: First dredge the zucchini fries in the egg, then roll them in the breading mixture until evenly covered on all sides. Place the zucchini fries into the air fryer in a single layer.

COOK: Spray the fries with olive oil spray, then cook at 400°F for 10 minutes until the zucchini wedges are golden brown. Serve.

Air Fryer – The air fryer perfectly cooks the vegetables by circulating hot air around them without adding a lot of oil. They therefore keep all their delicious flavor without adding too many calories.

TIPS FOR THE BEST AIR FRYER FRIED ZUCCHINI

Follow these tips to make the best fried zucchini air fryer recipe.

✔️ Use fresh zucchini that’s firm.

✔️ Cut into equal sized pieces, leave the skin on. Same sized pieces cook more evenly.

✔️ Pat the zucchini dry if the egg wash isn’t sticking.

✔️ Press lightly to make the breading stick. Use your hands to help the breading stick to the zucchini.

✔️ Spray with an oil before air frying. This prevents the breading from being dry. It helps it cook up to a golden color. We like to use avocado oil.

STORAGE TIPS

Refrigerate:  Air fryer roasted vegetables taste best fresh right out of the air fryer. If you have any leftovers you can store them in an airtight container or a ziplock bag in the fridge for up to 3 days.

Reheat: To reheat these breaded zucchini wedges place them in the air fryer for 2-3 minutes at 400ºF, or until heated through. This will also give them some of their crispiness back, however, the texture will be slightly different from fresh ones.

Freeze: We do not recommend freezing this vegetable dish as it might lose its texture.

Are air fryer vegetables considered healthy?

Air fryer roasted vegetables use less oil during cooking and therefore cut calories. They also keep more nutrients inside your veggies compared to other cooking methods.

Can you make zucchini fries in the oven?

Yes, you can. Preheat the oven to 425ºF and line a baking sheet with parchment paper. Prepare the zucchini as described in the recipe from step 1-4. Then place them on a baking sheet and spray with olive oil spray. Bake for 20-25 minutes or until golden brown and crispy, turning them once at the halfway mark.

What can you serve with breaded zucchini wedges?

Zucchini fries are a great low-carb side dish for grilled or air fried meats, fish or seafood. However, they also taste amazing just by themselves or served with a dipping sauce. We like ketchup, ranch dressing, garlic aioli, fry sauce or homemade tartar sauce.

Ingredients
  

  • 1 medium zucchini cut into ½" wedges, do not peel
  • 1 egg
  • ¼ cup panko bread crumbs
  • ¼ cup all-purpose flour
  • ¼ cup parmesan cheese grated
  • 1 tsp Italian seasoning
  • ½ tsp garlic powder
  • pinch of salt
  • pinch of pepper (optional)
  • olive oil spray

Instructions

  • In a small bowl, beat egg.
    Egg whisked in a bowl.
  • In another small bowl, combine panko, flour, parmesan, Italian seasoning, garlic powder, salt and pepper.
  • Spray air fryer basket with cooking spray.
  • Dredge the zucchini in the egg then roll in the breading mix.

  • Place zucchini wedges into the air fryer basket. Spray tops and sides of zucchini wedges with olive oil.

Notes

  • If you’re using more than one zucchini you may need to cook in batches, depending on the size of your air fryer.
  • The breading will be dry if you don’t brush or spray with oil before or during cooking.
